The Inflorescence label uses grapes grown in the vineyards of Cedric's father, but Cedric controls 100% of the farming practices and methods.
All fruit used in this cuvée came from the 2007 harvest. This 100% Pinot Noir cuvée came from the lieu-dit "Val Vilaine," and is owned by Cedric's father. The vineyard totals about 1.5 hectares, and yields 45 hectoliters per hectare, or roughly 3 tons per acre.
Vinification: 1st press juice only; hand-harvested, crushed by foot; élévage in stainless steel; indigenous yeasts, unfined, unfiltered; aged 16 months on lees; non-dosé.
The wine was disgorged in April 2009.
