The Inflorescence label uses grapes grown in the vineyards of Cedric's father, but Cedric controls 100% of the farming practices and methods. This is 100% Pinot Noir from a 0.5 hectare parcel.
Cedric creates his extraordinary champagnes in a quintessentially classic manner: he hand-harvests, vinifies the first press juice only, and crushes the grapes by foot. Élévage occurs entirely in stainless steel with indigenous yeasts.
He gives "La Parcelle" the longest aging regimen of all his wines. This wine is unfined, unfiltered, and aged for 80 months. It is non-dosé. It was disgorged in July 2008.
