This Rosé is made of 100% Pinot Noir grapes from Bouchard's vineyards. The parcel named Creux d'Enfer is quite tiny at only 0.032 hecatares. Cedric produces only 500 bottles of this wine per year.
His extraordinary champagnes are produced in a quintessentially classic manner: Cedric hand-harvests, vinifies the first press juice only, and crushes the grapes by foot. Élévage occurs entirely in stainless steel with indigenous yeasts. The wine is unfined, unfiltered, and aged for 46 months. It is non-dosé.
This wine was disgorged in March of 2008.
