Vinification:Ripe and clean grapes are immediately pressed and wild yeast fermentation takes place in neutral barrel.
Aging:18 month elevage in neutral barrel.

Tasting:Aromatically vibrant, this Bourgogne Blanc is a step up in fruit density and mineral character. Olympe is an excellent translator of Chitry's oyster shell-centric soils and the 2014 is electric!
