Soil:Soil is made up of moraine (glacial deposit) which is high in minerals, rocks, gravel and sand.
Viticulture:Hand harvested. Guyot pruning.
Vinification:After one night of skin contact the juice is separated from the skins followed by a temperature-controlled, slow fermentation.
Aging:Stainless steel.
Production:80,000 bottles produced.

Vivid dark pink. Clean, fresh aromas of cassis, licorice, and spicecake. Then rather tight and much less pliant than this wine is normally, displaying good density and depth nonetheless. Red cherry and licorice flavors are nicely lifted by hints of violet, but a firm acid spine and a grainy, chalky mouthfeel leave a strong tactile, not especially fruity impression. The finish hints at a touch of residual sweetness and violet. I’m normally a huge fan of this wine, but I’m not sure this specific vintage will go down as the most successful ever of this wine, so to speak.
