Viticulture:Organically farmed since 1975, biodynamic-demeter certified since 1998. Soul worked manually and yields are kept low. All grapes are hand harvested.
Vinification:Gravity fed with no use of pumps. Wild yeast fermentations with no racking of the must.
Aging:Aged on the lees in underground vats.
Production:1,500 cases
Tasting:Usually the most mineral-driven and delineated of the lineup, the granite has an elegant nose with pronounced notes of mineral, flint, silex, citrus fruits and oyster shells. The attack is sharp and precise, the palate is crystalline and pure, with salty, mineral notes, combined with chalk and citrus fruits. A transporting wine that promises to be long-lived.

The lemon colored 2012 Muscadet Sèvre et Maine Granite offers brisk yeasty flavors with aromas of pineapples, limes, confit de citron and almond biscuit on the nose. Medium-to full-bodied, this is a complexly mineral wine with a juicy fruit expression and a slightly salty aftertaste.

The 2012 Granite bottling from Messieurs Bossard and van Herck, as the name suggests, comes from hard granite soils and the vineyards for this cuvée are planted with forty-five to fiftyfive year-old vines. As was the case with the very strong 2011, the extra mineral drive of the 2012 Granite bottling makes for a very, very special example of Muscadet, as the wine soars from the glass in a blaze of tart orange, smoke, very stony and complex minerality, bread fruit, leesy tones, lemongrass and a gently briny topnote. On the palate the wine is deep, full-bodied and utterly refined on the attack, with a rock solid core, great stony soil signature, snappy acids and stunning length and grip on the impeccably balanced and laser-like finish.
