Vineyard:Grapes are sourced from the areas of Bidini, Acate and Ragusa.
Orientation:Vineyards average at about 180m in elevation.
Soil:The soil - locally known as "Milaro" - is characterized by a particular substrate of calcareous sandstone, inter-leaved with packets of clay that allow the vines to produce high quality grapes.
Viticulture:Grapes are harvested during the first and second weeks of September.
Vinification:Fermented in stainless steel.
Aging:After fermentation the wine is aged in stainless steel for four months followed by an additional four months in the bottle before release.
Tasting:Zagra in Sicilian dialect means white citrus blossom.

Pale straw. Clean fresh and deep aromas of grapefruit, sage and fennel complicate notes of white peach apple and pear; strikes me as a very complex nose. Then rich, dense and suave but very well delineated and vibrant on the long, juicy and mineral back end. 100% Grillo grown on clay-sandy soils near the sea, this is a knockout wine, one of the best I have tasted from Valle dell’Acate in recent times.
