Vineyard:All estate owned vineyards on pure schist with very steep inclines. Most of the vineyards are terraced. Fincas is made from a native Galician variety called Caino or Souson. The average age of the vines is 80 years old.
Orientation:South facing in the Amandi sub zone.
Soil:schist or "losa" as it is locally known.
Viticulture:The vineyard work is all done by hand including harvest. Fernando Gonzalez is in charge of the viticulture and practices biodynamics.
Vinification:The wines are fermented with wild yeasts. The grapes are foot troden in large oak fermentation vats.
Aging:Aged in old French oak barrels for 12 months and 12 months in bottle.
Production:Extremely small. Over 30% of the production is consumed locally.
