Vineyard:All seven indigenous grape varieties co-planted by Thierry Laherte in a 1.7 hectares pacel behind the winery in Chavot. This was intended to add to the heritage of the winery and serve as a "test plot" for better understanding the character and potential of the individual varieties.
Soil:Chalky-clay soils with the presence of pebbles.
Viticulture:Farmed organically with biodynamic influences. Soils are worked with a horse and plow.
Vinification:Grapes are picked up by hand when fully ripe, then pressed. Natural alcoholic fermentation in neutral Burgundy barrels. No malolactic fermentation. Blend of 60% current vintage and 40%: continous solera that was started in 2005.
Aging:6 month elevage with regular stirring of the lees.Light filtration before bottling in spring. Dosage is 4 gr/l; disgorged « à la volée » (by hand)
Tasting:This is a singular wine in the region as it is both a combination of all seven grape varieties AND 40% of the blend is from a continous solera started in 2005. There is an art to finding an acid and sugar balance across all seven grape varieties when determining picking dates, which is a challenge tht Aurelien embraces and appreciates. The resulting wine is dense, rich, racy and endlessy pleasing.

Laherte's NV Extra Brut Les 7 emerges from a parcel in Chavot planted with all seven permitted varieties. Intensely perfumed and bright, Les 7 showcases striking interplay of aromas, flavors and textures. Citrus, white orchard fruit and sweet, perfumed overtones all develop in the glass. The current release is based on 2014, with 40% reserve wines from a perpetual reserve that spans vintages 2005 through 2013. Disgorged: February 2017. Dosage is 0-4 grams per liter.
