Vineyard: Average of 45 year old vines in three plots planted in 1996, 1980 and 1960’s lying under the midriff of Bonnes Mares.
Soil: Clay/limestone with a fair amount of stones
Viticulture: Lutte raisonée, organic following the flowering.
Vinification: Traditional vinification; 7 day cold maceration, 3 week alcoholic fermentation.
Aging: Aged in French barrels, 30% of which are new
This is the first wine to display any appreciable amount of wood though it's not enough to prevent the purple fruited and floral-scented nose to be appreciated. Once again there is an opulent mouth feel to the generously proportioned flavors that coat the palate with dry extract that also serves to buffer the textured and ever-so-mildly austere finale.
