Vineyard: Blend of Les Charmois and Les Poiset, two well-reputed hillsdie vineyards located south of village near the forest line.
Soil: Clay limestone -- complex mix of soils for a villages site.
Viticulture: In organic conversion, incorporating some biodynamic principles, soils worked with a horse and plow. Heavy green harvesting to limit yields and encourage good concentration. All grapes are picked by hand at harvest.
Vinification: Harvested at optimum ripeness (always determined by consistent tasting in the vineyards), 100% destemmed, closed tank fermentation with cuvaison of 10 to 15 days.
Aging: One year of ageing in 50% new barrels and 50% one year old barrels.
Production: 75 cases
Notes: The addition of Les Poisets gives more stuffing and a juicier profile to this once single vineyard Nuits-St-Georges cuvée. The noste is dominated by subtle aromas of black fruits, liquorice and pepper followed by a firm and voluptuous palate. Will reward over the next 7 to 8 years.
