Vineyard: Vineyards located between the cliffs of the Pic St Loup and the Montagne de Hortus, about 15 km from the Mediterrean Sea.
Orientation: Various orientations from full south to full north. In general, cooler climate varietals are grown in north-facing (Syrah, Sauvignon Bl) and warmer climate grapes in south-facing (Grenache, Mourvedre).
Soil: A fairly high percentage of limestone from the nearby cliffs that have eroded over time.
Viticulture: Lutte raisonee. No chemical additives used in the vineyards, unless there is a threat of losing an entire vintage.
Vinification: Fermented in temperature controlled tanks with a cuvaison up to one month.
Aging: Aged for 9 months in a combination of 65% tank and 35% 2nd passage barrels.
Production: Approximately 6500 cs.
