Vineyard: Vineyards located between the cliffs of the Pic St Loup and the Montagne de Hortus, about 15 km from the Mediterrean Sea. Foothill parcels planted at a density of 4000 to 7150 vines per hectare.
Orientation: Multiple parcels, varied exposure. Cool air currents, grapes ripen especially late.
Soil: Brown soil and limestone scree from the nearby cliffs that have eroded over time.
Viticulture: Soils are worked, no chemical additives used in the vineyards, unless there is a threat of losing the vintage.
Vinification: Direct press, clarification in temperature controlled tanks with a 3-4 week cuvaison.
Aging: Aged for 4 months in tank
Notes: A NEW and exciting rose addition! Salmon pink in color, this Languedoc rose is grown on foothills sandwiched between dramatic limestone cliffs. Elegant and vibrant with aromas of dried violets, nuanced flavors of crushed berries and a crisp acidity that keeps you coming back for more.
Lurid pink. Aromas and flavors of dried red fruits, orange zest and white pepper take on a subtle herbal note as the wine opens up. Chewy and sharply focused, offering good energy; a touch of bitter cherry lingers on the taut, nervy finish. This wine has the oomph to work with full-flavored food but it's nervy enough to drink by itself.
