Fukucho is the only brewery to use Hattanso, a once abandoned rice. Toji Miho Imada painstakingly revived the rice by first growing it herself in order to learn how to brew it. She passed along her knowledge to farmers that now grow it for the brewery. After years of experimenting, Miho discovered that milling the rice much less than most junmai-shu results in the best balance and complexity, and also allows the full flavor of the rice to be expressed in all its haughty boldness. The Nv Fukucho Hattanso 50 Junmai Daiginjo is a very smooth and seductive sake. It is clean and pure on the palate, with creamy structure and a long, spicy, mineral finish. Rice: Hattanso 75% and other 25%. Alcohol: 16%.
