Soil: Clay limestone soils
Viticulture: Organically farmed, soils worked.
Vinification: Alcoholic fermentation in foudres (20%), tanks(20%) and barrels(60%) with regular stirring of the lees. Malolactic fermentation partly made. 32 gr/l dosage
Aging: Ageing during 6 months and light filtration before bottling during the spring time; Disgorged April 2015 with 32 grams of sugar per liter.
Production: 1,000 bottles (83 12pks)
Notes: This is the base 2012 (a high acid vintage) of the Brut Ultradition which was disgorged in April 2015 with 32 grams of sugar per liter. This period after disgorgment created a great integration of the sweetnes and the development of secondary flavors but still balance with the natural acidity of this wine.
The 2012 Demi-Sec is a very pretty wine. Even with 32 grams of sugar, Laherte's Demi-Sec is translucent and weightless, not to mention absolutely impeccable in its balance. Orchard fruit and floral notes are very nicely woven together in this very expressive, nuanced Champagne. The 2012 was fermented in a combination of foudre, tank and barrel. Disgorged: January 2015. Dosage is 32 grams per liter.
