Vines rangeing from 15 to 30 to 60 years of age grown at 200 meters in altitude
Orientations to the south, southeast and north on the top of the slope, so considerable sun exposure.
Clay limestone with a layer of kimmeridgian characterized by a strong presence of "exogyra virgula" -- small, fossilized oyster shells.
Soils are worked and fertilized with compost (no herbicides or synthetic fertalizers are used), green harvest is done, and grapes are harvested at optimum ripeness.
Ripe and clean grapes are immediately pressed and wild yeast fermentation takes place in neutral barrel.
18 month elevage in neutral barrel.

Aromatically vibrant, this Bourgogne Blanc is a step up in fruit density and mineral character. Olympe is an excellent translator of Chitry's oyster shell-centric soils and the 2014 is electric!
