Vineyard: Vines rangeing from 15 to 30 to 60 years of age grown at 200 meters in altitude
Orientation: Orientations to the south, southeast and north on the top of the slope, so considerable sun exposure.
Soil: Clay limestone with a layer of kimmeridgian characterized by a strong presence of "exogyra virgula" -- small, fossilized oyster shells.
Viticulture: Soils are worked and fertilized with compost (no herbicides or synthetic fertalizers are used), green harvest is done, and grapes are harvested at optimum ripeness.
Vinification: Ripe and clean grapes are immediately pressed and wild yeast fermentation takes place in neutral barrel.
Aging: 18 month elevage in neutral barrel.
Notes: Aromatically vibrant, this Bourgogne Blanc is a step up in fruit density and mineral character. Olympe is an excellent translator of Chitry's oyster shell-centric soils and the 2014 is electric!
