Vineyard: One of Vouvray's legendary sites -- only vineyard in Loire referred to as 'Grand Cru'. 2.7-hectares, which Chidaine began replanting in 2007 after purchasing the estate.
Soil: Clay and chalk on a base of "tuffe", soft white limestone.
Viticulture: Hand harvested and farmed biodynamically
Vinification: Always vinified sec in stainless steel using indiginous yeasts
Aging: Aged in older demi-muids
Production: Extremely limited in 2012 vintage
Notes: The Grand Cru site of Clos Baudoin is gifted in its 60+ year old vines. The small amount of wine that Chidaine makes from this historic site is sleek and fine, with more depth and dimension than his other Vouvrays. Chidaine feels this site expresses itself well as a sec wine, therefore the fruit from this site is always vinified dry.
